INGREDIENTS:
45mls Gin
20mls Cointreau
Half a lemon squeezed
10mls simple syrup
15mls Egg white
20mls Soda

METHOD:
Place the gin, Cointreau, lemon juice, simple syrup and egg white in a cocktail shaker and dry shake (without ice) for 15-30 seconds. Add ice to the shaker and shake for another 15 seconds and fine strain into a chilled champagne glass. Top up with soda water. Garnish with lemon zest and enjoy!
